You can make this kale and mango salad easily in under 5 minutes. The recipe uses the juice of a lemon, a few walnuts, and no oil for a low calorie dish.
One thing I liked about this recipe is how filling it was, given the modest amount of calories it contains. For just over 200 calories, you are going to spend more time eating this kale and mango salad than you did preparing it. While it was ready in only 5 minutes, start to finish, it took me a good 10 minutes of chewing these delicious ingredients.
Chewing slowly is a good thing. You prepare your digestion and make the process easier for your stomach. Eating slowly also helps eating less, as the body produces leptin after a few minutes of eating, which reduces the sense of hunger. This is a natural process, and in principle, if we avoid eating too fast, it should help us avoid over eating.
In the case of a low calorie meal, as I did here for a fasting mimicking diet week, having this nutritious kale to chew on did wonders to satiate my appetite. The presence of walnuts helped balance the flavor and add a little bit of fats to balance this meal rich in carbohydrates, and fiber.
At any rate, if you are looking for something nutritious, natural, quick to make, and raw for a light meal, this k ale and mango salad is an excellent choice.
