Oats can be wonderful for breakfast. They are like rice and pasta, in a way: you can create an infinite amount of dishes from using them as a base ingredient. When I wake up, especially in seasons other than summer, I feel like eating and drinking something warm. Coffee or a hot orange juice are some examples of drinks I make. While sipping on these, I turn on the gas stove and prepare some oats. This recipe is a simple breakfast bowl that will fill you up until lunch. It is prepared with vegan ingredients, using almond milk instead of cow milk.
This is a typical breakfast I enjoy with Marc, my younger son, who is now 13 and likes fruits and oatmeal. He sometimes asks for a little bit of a sweeter taste, in which case I add half a teaspoon of honey, or if you want to keep the dish fully vegan, maple syrup. Yep, honey is an animal product!
Oatmeal with kiwi, mango, banana and almond milk
Ingredients
- 1 cup steel cut oatmeal (read cook time on your package, it differs by brand)
- 2 cups water
- 1 mango
- 1 banana
- 2 kiwis
- 1 cup almond milk
Instructions
- Place the oats and water in pan, bring to boil then simmer for 7 minutes. Stir occasionally to minimize sticking
- Peel and slice the fruits, then place them in bowls.
- Add the cooked oatmeal on top. Stir, then top with the almond milk at the end.
